Rachel and Jun film Toyota Home Aichi installing a prefabricated house unit in Japan, with the assembly and roof waterproofing completed in about half a day.
Cited in prefab and housing threads as proof that high-quality modular homes can be assembled on site in hours.

Here's a cool video of ToyotaHome (yes, that Toyota) assembling a modular home in Japan: this video Their website: [LINK] (JP only, no English)
It might come down to culture/demand? In Japan where it's preferred to make a new home rather than buy a pre-owned one (outside the big city), pre-fab seems to have taken off rather more (13% of new builds in 2013). For example, a house built in a day (customisable, moderately expensive but very high quality): this video
Toyota manufactures houses in Japan [1]. If they sold them in the US, I'd buy one in a heartbeat. [1] this video
There's a good chance of not seeing one being built since it might only take 6 hours -- see [1]. [1] this video
