I'm surprised nobody here has mentioned Artisan Bread in Five Minutes a Day. I've been using this method on and off for years with great results. In fact I'm just finishing off eating a few slices from a loaf that just came out of the oven now!

The idea is that you pre-make dough in batches and refrigerate. Then on baking day (every 2-3 days for me) you shape a loaf and bake it. All the baking day tasks add up to less than 5 minutes spread over a couple of hours, and the prep is really quick too!

The basic recipe is the best starting point: https://artisanbreadinfive.com/2013/10/22/the-new-artisan-br...

I've used this technique and works great (article is from 2006). There's a video of it somewhere too, which is helpful for seeing how "wet" the dough is.

I second your Ratio plug. I'd also recommend adding Artisan Bread in Five Minutes a Day to the mix, another great (easy!) bread book.

Speaking of schedule, Artisan Bread in Five Minutes a Day is one that worked well for us when we were busy. It's not the best bread in the world, but, considering the amount of effort that goes into it, the technique feels like cheating.
